Here is your Banana Bread with Orange & Brandy recipe

BANANA BREAD with ORANGE ZEST and BRANDY

Mix well:

2 large eggs

1/3 cup oil which should be 50/50 shortening and butter (best to melt)

½ tsp salt

2 tsp baking powder

¼ tsp baking soda

1/3 cup plain yogurt or sour cream

1 tsp Honey (Honey can be flavored differently depending on where it's from. One teaspoon is a good starting point to test what you are using)

1 tsp orange zest (I use an Etched Zester. Once you make this you can adjust the amount and type of zest to your liking)

1 ½ tsp orange juice

1 ¼ tsp Brandy

 

Add and mix:

2/3 cup sugar (I use all turbinado sugar in the raw to give it some depth of flavor)

3/4 tsp vanilla

2 large or 3 small bananas (should be very ripe)

 

Add and Mix:

1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

 

Stir in:

1 cup chopped walnuts

 

I melt a little butter into a bowl and add approx 2-3 tsp orange zest into it. Press zest into the butter to release some of the oil from the zest. Brush onto top of bread when it's approx 75% done then finish baking.

TIME LISTED IS BASED ON GLASS PAN. Prep pan with oil/butter/spray and flour. Set your standard oven to 350F (176C) or 325F (163C) for a convection oven.

Check periodically, but generally needs 70-75min to bake.
