BANANA BREAD with SPLENDA AND WHEAT FLOUR

Mix well:

2 large eggs

1/3 cup oil which should be 50/50 shortening and butter (Best to melt for measurement...for this specific recipe I use about 70% butter and 30% shortening)

½ tsp salt

2 tsp baking powder

¼ tsp baking soda

1/3 cup plain yogurt or sour cream

1 tsp Honey (Honey can be flavored differently depending on where it's from. One teaspoon is a good starting point to test what you are using)

Add and mix:

2/3 cup Splenda

1 tsp vanilla

2 large or 3 small bananas (should be very ripe)

Add and Mix:

1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

Stir in:

1 ½ cup chopped walnuts

TIME LISTED IS BASED ON GLASS PAN. Prep bread pan with oil/butter/spray and flour. Bake at 325F (163C) deg in a convection oven...350F (176C) in a standard oven.

Check periodically, but generally need at least 55min to bake when NOT using nuts. I set timer for 45min and check at that point. It normally takes 55min w/o using nuts.
