****NOTE: THIS MAKES ONE MINI LOAF****

Pan Size:  5 1/2" x 3" x 2 1/4" high

 

 

BANANA BREAD with APPLE & PEANUTS

Mix well:

1 large egg

ONE HALF OF: 1/3 cup oil which should be 50/50 shortening and butter (best to melt)

1/4 tsp salt

1 tsp baking powder

1/8 tsp baking soda

ONE HALF OF: 1/3 cup plain yogurt or sour cream

1 tsp Honey (The honey flavor should be subtle. Note that honey can have different flavors depending on where it's from)

¼ cup Pureed Apples

1/8 tsp Cinnamon

Add and mix:

1/3 cup sugar (Turbinado sugar in the raw)

3/4 tsp vanilla

2 small bananas (should be very ripe)

Add and Mix:

1 cup sifted all purpose flour

Stir in:

¼ Cup crushed peanuts.  (I use cocktail peanuts.  First, I wash off the salt then let them dry.  Then, I put them between two pieces of parchment paper and hammer lightly with a rolling pin to get the size I'm looking for)

****If you like, drizzle some liquid caramel over the top after the loaf cools. YUM-YUM!

TIME LISTED IS BASED ON GOLD MINI PAN. Prep pan with oil/butter/spray and flour. Set your standard oven to 350F (176C) or 325F (163C) for a convection oven. Check periodically, but generally needs 60-65 min to bake.
