This site is about making the perfect banana bread!Unfortunately, after a long television career my cooking days were slowed immensely when cancer decided to pay me a visit. My Multiple Myeloma (blood cancer), subsequent transplant and other related medical issues slowed things down quite a bit. I'm officially considered "disabled"...but I keep on truck'n!Some may recognize my name, Tom Burse. I've been a
TV-Radio-Newspaper Meteorologist since 1982. I've been on
television in Jackson Mississippi, Lexington Kentucky, Miami, Cincinnati
and Chicago as well as radio stations across the U.S. and the
Caribbean. Thanks to my immune system (or lack thereof) most of
what I do is remote. I still do radio. In fact, I can be heard on
WGRT Radio. After 42 years in the
business I can honestly say this is the best
group of radio people I've ever worked with. I also do a little
volunteer work with some wonderful people at
Queen City Hospice in Ohio.

Mix well: 2 large eggs 1/3 cup oil which should be 50/50 shortening and butter (Best to melt for measurement...for this specific recipe I use about 70% butter and 30% shortening) ½ tsp salt 2 tsp baking powder ¼ tsp baking soda 1/3 cup plain yogurt or sour cream 1 tsp Honey (The honey flavor should be subtle. Note that honey can have different flavors depending on where it's from)
Add and mix well: 2/3 cup sugar (I use all turbinado Sugar in the Raw to give it some depth of flavor)3/4 tsp vanilla 2 large or 3 small bananas (should be very ripe)
Add and Mix: 1 ¾ cup sifted all purpose flour (219 grams) (7.7 oz)

TIME LISTED IS BASED ON GLASS PAN. Prep bread pan with oil/butter/spray and flour. Bake at 325F (163C) deg in a convection oven...350F (176C) in a standard oven. Check periodically, but generally needs at least 55min to bake when NOT using nuts. I set timer for 45min and check at that point. It normally takes 55min w/o using nuts. NOTE: This is called sugar free only because it uses SPLENDA. There IS sugar naturally in the honey and some other ingredients. |
